Bran Muffins


Ingredients:

1 1/4 cups all-purpose flour
1/2 cup granulated sugar
1 Tbs. baking powder
1/4 tsp. salt
1 1/2 cups All-Bran cereal
1 1/4 cups milk
1 egg
1/4 cup vegetable oil
Pam cooking spray

Preparation:
Stir together flour, sugar, baking powder and salt. Set aside.

In a large mixing bowl, combine All-Bran and milk. Let stand about 3 minutes or until cereal softens. Add egg and oil and mix well. Add flour mixture, stirring only until combined. Portion batter evenly into twelve muffin pan cups coated with cooking spray.

Bake at 400° about 20 minutes or until golden browned. Serve warm.

Variation:
Add nuts or fruit for variety.

History:
This is the recipe from the side of the box of All-Bran Cereal. Each muffin contains 160 calories.
