Cheese Cake (New York Style)

Ingredients:

     Crust
1 3/4 cups fine graham cracker crumbs (1 1/2 pkg.)
1/4 cup finely chopped walnuts
1/2 to 3/4 cup melted butter
1/2 tsp. cinnamon

     Filling
3 eggs, well beaten
16 oz. cream cheese, beaten until smooth
1 cup sugar
1/4 tsp. salt
2 tsp. vanilla
3 cups sour cream

Preparation:
To make crust, mix graham cracker crumbs, walnuts, cinnamon, and melted butter. Press crumbs on bottom and sides of 9” spring form pan.  Wrap bottom of pan with heavy duty aluminum foil.

In a mixing bowl, combine cream cheese and sugar. Add eggs, salt and vanilla and beat until smooth. Blend in sour cream. Pour into crumb crust. Place pan into baking sheet or pan with sides at least 1 inch high.  Place in oven and add water to baking sheet.  Bake in a 375° oven 40 minutes or just until set. Turn oven off and let the pan cool in oven with door ajar. Chill well or about 4 to 5 hours. Remove sides of pan when cool.

Top with cherry pie filling or fresh fruit (such as strawberries) and glaze the top.
