Cinnamon Lollipops


Ingredients:
2/3 cup sugar
3 1/2 Tbs. corn syrup
1/4 cup hot water
3 drops oil of cinnamon
1/2 tsp. red food coloring

Preparation:
Combine sugar, corn syrup and water. Place on fire and stir until sugar is dissolved. Cook to hard crack stage wiping down crystals on sides of the pan as they appear. Remove from heat. Add coloring and cinnamon. Drop by spoonfuls on buttered flat surface. Insert meat skewers. Let suckers cool and remove from paper.

History:
Cinnamon lollipops were one of the first recipes I learned from my Home Economics classes.
