Financiers aux Almonds ou Noisettes (Mini Sponge Cakes)

Ingredients:
200 grams butter
6 egg whites
180 grams powdered sugar
80 grams flour
100 grams powdered almonds or hazelnuts
1 tsp. honey
4 drops almond extract

Preparation:
Heat oven to 190° Centigrade or 375 Fahrenheit.
Heat butter in pan until melted and just starting to brown and smells like nuts. Cool.

Beat egg whites until fluffy but not stiff. Add sugar, flour, powdered nuts, honey, almond extract and cooled butter. Mix well and pipe into miniature molds. Sprinkle top with roasted, sliced almonds if desired. Bake for 15 minutes. Remove from mold while hot and let cool. Sprinkle with powdered sugar.

Serving Suggestion:
This makes a nice sweet cake to go with Champagne, coffee or on a buffet table.

History:
This is a traditional French petit four.
