Orange Nut Bread


Ingredients:
1 cup candied orange peel*
1 1/2 cups granulated sugar
3 large eggs
1 cup orange juice
1/4 cup butter, melted
1 tsp. vanilla
2 1/2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 cup walnuts

Preparation:
In a food processor, cream eggs and sugar for 1 minute. Add butter and orange juice and process another minute. Add vanilla. Combine flour, soda, salt and baking powder. Add flour mixture to processor and mix on and off just until combined (4 to 5 times). Add candied peel and walnuts. Mix on/off 4 or 5 times.

Butter and flour two small (4-inch by 8-inch) loaf pans. Pour mixture into pans, splitting between the two. Bake for 50-60 minutes in 350° oven until knife inserted in center of bread comes out clean. Remove from oven and let stand 10 minutes. Remove from pans and cool on rack. Bread keeps well in refrigerator for 2 or 3 weeks or up to a year in the freezer.

*Candied Peel:
3-4 oranges
1 cup boiling water
1/2 cup sugar

Juice oranges and reserve. Boil peels 10 minutes in water. Scrape out membranes and white pulp. Julienne remaining peels. Place julienned peels in pan. Add sugar and boiling water. Cook until almost dry and peels are candied.
