Potato Cake

Ingredients:
1 cup shortening
2 cups sugar
3/4 to 1 cup cocoa
1 cup mashed potatoes
4 eggs
1 cup milk
1 cup flour
2 tsp baking powder
1/2 tsp. salt
2 tsp. nutmeg
2 tsp. cinnamon
2 tsp. cloves
1 tsp. vanilla
1 cup walnuts

Preparation:
Combine cocoa with sugar using the back of a spoon to blend. In a mixer, cream together sugar/cocoa mixture with shortening. Blend in mashed potatoes. Add eggs, one at a time, and blend well after each addition. With mixer running on low speed, add milk. Mix together flour, baking powder, salt and spices. Add to batter and mix well. Add vanilla. Stir in nuts. Pour into 2 round cake pans and bake at 350° for approximately 40 minutes or until cake springs back when a finger gently touches center of cake.

Frost cake with your favorite dark, fudge frosting.

History:
This is the Coffman family recipe that Dad’s sisters always brought to family reunions.
