Baked Whole Yellowtail

Ingredients:
1 6-pound yellowtail, scaled, gill and gutted
Odile's first Yellowtail.
1 lemon, sliced
1 carrot, peeled and sliced
1 small onion, sliced
4 green onions, sliced
Garlic salt

Preparation:
Salt fish inside and out. Lay on foil. Put carrot, lemon, and onions in cavity.  Seal in foil and bake for 1 1/2 hours at 375°.

Serving Suggestion:
Serve with your favorite sauce (tartar, rouille, or ponzu sauce).
