BBQ Barracuda

Ingredients:
1 1/2 lbs. barracuda fillets with the skin on
Salt
2 or 3 lemons, sliced
1 onion, thinly sliced
Liquid smoke

Preparation:
Place fillets, skin side down, in a glass container. Sprinkle fillets with salt and cover with plastic wrap. Place in refrigerator for 3 days to let salt remove the strong flavor.

Sprinkle fillets with a few drops of liquid smoke. Place lemons and onions over fillets and marinate 20 – 30 minutes. 

BBQ fish slowly over alderwood chips.


 
Barracuda have sharp teeth and are fast swimmers.
The flesh is strong tasting unless processed properly to take the strong
taste out of the meat. These are a fun spring time fish to catch on a metal jig.
