Crabmeat Quiche

Ingredients:
1 unbaked pie crust
8 oz. grated Swiss cheese or Gruyère
8 oz. crab meat
1 cup heavy cream or half and half
3 green onions, thinly sliced
1/2 tsp. dry mustard
1/2 tsp. salt
3 eggs
Dash mace

Preparation:
Place grated cheese in unbaked pie crust. Place crab over cheese and sprinkle green onions on top. In a bowl, beat eggs with salt, mace, mustard and cream. Pour over cheese mixture. Bake at 325° for 1 hour to 1 hour 15 minutes.

Serving Suggestion:
Serve with a crisp green salad and a glass of chilled white wine.

Variation:
Use a combination of crab and lobster or substitute shrimp if you like. Try ham, sausage or prosciutto instead of the crab for a different taste completely.
