Date Nut Bars

Ingredients:

Crust
1 1/2 cups Quick Rolled Oats
1 3/4 cups flour
1/2 tsp. soda
1/2 tsp. salt
1 cup brown sugar
1 tsp. ground cinnamon
1 cup butter, melted

Filling
1 lb. pitted dates, finely chopped
1 cup sugar
1/2 cup water
1 cup chopped nuts

Preparation:
Prepare filling first by combining dates, sugar and water in saucepan. Boil mixture until smooth.

Next prepare the crust. Mix together oats, flour, soda, salt, sugar and cinnamon. Drizzle in melted butter while stirring. Spread 3/4 of crust mixture in bottom of a 6 inch by 10 inch shallow pan such as Pyrex. Spread date filling evenly over bottom crust. Sprinkle nuts on filling then sprinkle remaining crust on top. Bake at 325° for 30 minutes. Cut into squares while warm.

History:
Muriel Parmelee, Mother’s next door neighbor in Orange, shared this recipe with us. It was one of Mom’s favorites during the Christmas season.
