Ellen and Jan’s Toffee Surprise Cookies


Ingredients:
3/4 cups white sugar
3/4 cups brown sugar (packed)
1 cups butter, softened
1 tsp. vanilla
2 eggs
2 1/4 cups flour, sifted
1 tsp. baking soda
1 tsp. salt
8 oz. toffee chips
12 oz. dark chocolate chips
1 cups pecans, broken into small pieces

Preparation:
Cream sugars and butter together in a mixer. Add eggs and vanilla. Sift dry ingredients together. Add dry ingredients to sugar mixture. Mix until smooth. Add toffee chips, chocolate chips and pecans. Mix just until incorporated. Drop by spoonfuls onto cookie sheet. Bake 10 minutes then rotate pan and bake 1 minute more at 350° Convection or until golden brown.

History:
This recipe was created after Ellen’s first overnight fishing trip was cancelled due to severe wind conditions on the water. We consoled our selves with a Star Wars marathon, popcorn and baking cookies.  The trip was rescheduled and she caught one of only 5 tuna on the boat.


Ellen’s first fish – a 25 lb. yellowfin tuna, which she canned.
