1/2 cup shortening
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup flour
1/2 tsp. salt
1/4 tsp. baking soda
1/2 cup chopped pecans
Preparation:
Blend together shortening, sugar, salt and egg. Add dry ingredients and nuts to cream mixture. Blend well. Shape into 2 1/2 inches in diameter, roll in wax paper, and chill in refrigerator for several hours or over night. Cut thin slices of the chilled dough using sharp knife. Place on greased cookie sheet.
Bake at 375° for 12 to 15 minutes.
History:
Home economics was a required class in high school during the early sixties. Fortunately, some of that education produced recipes that were worth keeping such as this one for Ice Box Cookies.
