Ingredients:
3 to 4 small onions, chopped
2 Tbs. butter
1 1/2 lb. ground beef or turkey
1 Tbs. chili powder
1/4 - 1/2 tsp. cayenne pepper
Salt & Pepper to taste
1 14-oz. can whole kernel corn
1 7-oz. can pimento, chopped
1 14-oz. can tomato soup
1/2 to 3/4 lb. grated cheddar cheese
1 lb. noodles
Preparation:
Boil noodles in salted water until al denté. Set aside. In a skillet, sauté onion in butter until soft. Add ground beef to skillet and cook until brown. Mix together the noodles, ground beef, corn, pimento, soup, cheese and seasonings. Put in a casserole and bake at 350° until hot (30 to 45 minutes).
Serving Suggestion:
A green salad and garlic bread is all this peasant’s meal needs.
History:
When I was growing up, my parents were struggling to pay the mortgage so weekly card games with my aunt and uncle (Art and Liz Brown) was their entertainment. Our dinner was Italian Delight, green salad and garlic bread. I looked forward to this feast and spending time with my cousin, Dave. As our parents began earning more money, they would occasionally splurge for steaks for the adults. Dave and I still ate Italian Delight and were never disappointed. Thanks Mom and Liz.
Art, Liz, Mom, Dad and Dave are no longer with us.
