Lobster Tails

Ingredients:
2 8-oz. lobster tails
1 Tbs. salt
1/2 cup clarified butter
1 clove garlic, minced
1 lemon, juiced

Preparation:
Place water in a large saucepan and add the salt.  Bring water to a boil.  Drop lobster tails in boiling water and bring back to a boil.  Once water returns to a boil, cover pan and remove from heat.  Let stand for 5 minutes.  Remove lobster tails from water.  Cut back and underside of tails then remove meat.  Place each shell on plate and place tail meat on top of shell.

Warm clarified butter.  Add lemon juice and garlic.  Split butter between 2 small dipping bowls.  Serve with lobster tails.

Variation:
Plan on one 8-ounce lobster tail per person.  If cooking more than 2 lobster tails (1 pound), adjust cooking time so that you simmer the lobster tails 5 minutes per pound of meat.
