Marinated Salmon with Warm Leek-Ginger Vinaigrette

Ingredients:
    Fish
4 salmon fillets (8 ounces each)
    Marinade
Salt and pepper to taste
2 Tbs. fresh ginger, minced
3 garlic cloves, minced
2 Tbs. soy sauce
1/4 cup fresh orange juice
1/4 cup olive oil
2 Tbs. brown sugar
    Vinaigrette
2 Tbs. minced leeks
2 shallots, minced
1 Tbs. grated fresh ginger
1/4 cup fresh lime juice
2 Tbs. apple cider vinegar
2 tsp. soy sauce
1/2 cup vegetable oil
Salt and pepper to taste

Preparation:
Sprinkle the salmon with salt and pepper and place in shallow glass dish.  In a small bowl, combine the other marinade ingredients.  Mix well and pour over the fillets.  Cover and refrigerate for 2 to 4 hours.

Combine all vinaigrette ingredients (except oil, salt and pepper) and place in a small saucepan.  Bring to a boil, reduce the heat to low, and simmer for 5 minutes.  Remove from heat and whisk in the remaining three ingredients.  Return to stove over very low heat and keep warm but do not boil.

Remove salmon from marinade and broil until just cooked through, about 4 to 5 minutes per side.  Drizzle 1 tablespoon of vinaigrette over each fillet and serve immediately.
