Pfefferneuse


Ingredients:
1/2 cup melted butter
1 cup sugar
2 eggs
1/2 tsp. grated lemon rind
1/2 tsp. anise oil
2 cups flour
1 1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. baking soda
1/2 cup finely chopped citron (use oiled scissors)
1 1/2 cups finely chopped, blanched almonds
Powdered sugar

Preparation:
Combine butter, sugar and eggs. Add lemon rind and anise oil. Mix well. Sift dry ingredients together and add to butter mixture. Add citron and nuts. Blend well and shape into teaspoon-size balls. Put on greased cookie sheets. Bake at 350°for 12-14 minutes. Roll in powdered sugar while warm. Store in air-tight containers 2-3 weeks to cure. Pfefferneuse are one of Mike’s favorite cookies.
