Salmon Soufflé

Ingredients:
2 1/2 cups flaked salmon
1/4 cup butter
1 cup cream
1/4 cup flour
1/2 tsp. dry mustard
1/4 tsp. salt
1 Tbs. chopped parsley
6 eggs, separated

Preparation:
Butter soufflé dish and set aside.

Melt butter over medium heat; add flour, mustard, salt and parsley.  Gradually add cream and cook until thick.  Beat egg yolks then add a little cream mixture to yolks then add yolks to cream mixture whipping to incorporate well.  Beat egg whites until stiff.  Fold whites into cream mixture.  Pour into greased soufflé dish.

Bake at 350˚ for 45 minutes.
