Spicy Asian Tuna Burger

Ingredients:
1 pound fresh tuna, cut into 1-2 inch pieces
1/4 teaspoon seasoned salt
1/8 tsp. fresh ground pepper
2 green onions, chopped
1 garlic clove, minced
2 Tbs. fresh ginger, minced
1 Tbs. Asian chili sauce
1 Tbs. soy sauce
1/2 tsp. sesame oil
1/2 egg, lightly beaten
1/4 cup Japanese breadcrumbs (Panko Flakes)

Preparation:
In a food processor, pulse tuna, garlic and green onion until the meat is in pieces about the size of a garbanzo bean.  Add tuna to a bowl containing all of the remaining ingredients except the breadcrumbs.  Using your hands, combine ingredients.  Add breadcrumbs and mix with hands.  Form a ball about 4 inches in diameter.  Press together to form patty about 3/4 – 1 inch thick.  If the patty is too moist, add a little more breadcrumbs.  If it’s too dry, add some mayonnaise.  Makes 4 patties.

Patties can be grilled, broiled or pan-seared.  Serve on a bun with fresh tomato, lettuce and Thousand Island Dressing or mayonnaise.

Variation:
Use Wasabi mayonnaise in place of regular mayonnaise.
