Tarte à L’Oignon

Ingredients:
1 unbaked pie crust
2 lbs. onions, chopped
2 to 4 Tbs. butter
3 eggs
1 cup cream
1 1/2 Tbs. flour
1/8 tsp. nutmeg
Salt & pepper to taste

Preparation:
Sauté onions in butter until soft but not browned. Remove from stove and place in a bowl. Add flour to onions. Stir in eggs one at a time. Blend in the cream, salt, pepper and nutmeg. Pour onion mixture into pie crust and bake at 350°for 45 minutes or until light brown in color.

Variation:
Add a few pieces of chopped ham, procciutto or sausage for a variation.

History:
Odile serves this as a first course and we enjoy it as a breakfast entre.
