Wahoo on the Cedar Plank

Ingredients:
4 Wahoo fillets 3/4 inch thick
Lemon pepper
Olive oil

Preparation:
Brush fillets with olive oil and sprinkle with lemon pepper.

Heat oiled, cedar plank in 350º oven for 15 minutes.  Place wahoo on plank and cook 10 minutes.  Turn fillets over and cook another 10 minutes.

Serving Suggestion:
You may cook your favorite vegetables along with the wahoo.  My favorites are asparagus, baby onions, and new potatoes.  Parboil or steam asparagus, onions and potatoes a few minutes then season.  Finish cooking on the cedar plank with the wahoo.
