Ingredients:
1-3 oz. package lemon gelatin
1 cup hot water
1 cup cottage cheese
1 cup whipping cream
1-3 oz. package lime gelatin
1 cup boiling pineapple juice
1 cup crushed pineapple, drained
1 cup avocado, mashed or chopped
Mayonnaise and chopped walnuts (optional)
Preparation:
Dissolve lemon gelatin in hot water. After it starts to set, whip cream, fold cottage cheese into cream, and fold that mixture into gelatin. Put in a mold to set and chill.
Remove mold from refrigerator and prepare second layer. Dissolve lime gelatin in boiling pineapple juice. Add crushed pineapple and avocado. Spread over first layer and place in refrigerator to chill.
Serving Suggestion:
Remove gelatin salad from mold and serve topped with (or without) mayonnaise and chopped walnuts.
Variation:
A variant of this salad is to combine all ingredients together and pour into a mold to chill.
History:
My mother prepared a gelatin salad that had pineapple, cottage cheese and avocado molded inside. I never found the actual recipe that mother used as she doesn’t remember it, however, this recipe seems to capture the taste contained in that childhood memory.
