Beef Brisket

Ingredients:
2 1/2 lbs. boneless beef brisket
1/2 cup ketchup
1/2 cup water
1/4 cup minced onion
1 tbs. cider vinegar
1 1/2 tsp. horseradish
1 1/2 tsp. mustard
1/2 tsp. salt
1/8 tsp. pepper

Preparation:
Place brisket, fat side up, in a heavy casserole. Mix together remaining ingredients and pour over brisket. Cover tightly and bake in a 300˚ oven until very tender – about 3 1/2 hours.

This can be made a day or two ahead and reheated. To do so, refrigerate beef and gravy separately. Slice beef thin; arrange in an oblong glass 2 quart baking dish. Remove hardened fat from gravy. Pour gravy over brisket. Cover tightly with foil and reheat in a 350˚ oven until bubbling hot – about 30 minutes.
