2 lbs. fresh tomatoes, seeded and chopped
2 cups fresh basil, chopped
Salt to taste
1 small jar (1/2 cup) capers, drained
3 Tbs. sherry vinegar or balsamic vinegar
1 lb. angel hair pasta
Olive oil
Preparation:
Blend together capers and vinegar. Add tomatoes, basil and salt. Let stand 5 minutes.
Cook pasta in salted, boiling water until al dente. Drain pasta and place in large pasta bowl. Drizzle with just enough olive oil to keep the pasta from sticking together (1/4 cup).
Serving Suggestion:
Spoon tomato mixture over pasta and serve immediately with a crisp green salad and a hearty Italian bread.
