Chinese Chicken Salad

Ingredients:
4 oz. cooked chicken
5 oz. iceberg lettuce, shredded
1 Tbs. sliced green onions
1/2 cup won ton strips, fried crisp
1/2 cup rice sticks, fried crisp
1/2 tsp. toasted sesame seeds
1 tsp. diced pickled red ginger
1/4 cup chopped tomato
1/4 cup chopped cucumber
1/4 cup oriental dressing

Preparation:
Place lettuce in bowl. Add tomato, cucumber and dressing and toss well. Place lettuce in salad bowl and top with rice sticks, won tons and chicken. Place the ginger on the chicken and sprinkle with sesame seeds and green onions.

Variation:
Add mandarin orange slices for a refreshing sweet taste. Tortilla chips may be substituted for the won ton strips and rice sticks.
