Ingredients:
1/2 sweet onion
6-7 cloves garlic
2 Tbs. rice vinegar
Olive oil
2 or 3 bunches of cilantro
Preparation:
In a food processor add onion, garlic, rice vinegar and the cilantro (leaves only). Start to process and drizzle in olive oil slowly until mixture blends and is fairly thick. Add salt to taste. Taste and add more cilantro if needed depending on taste.
Prepare sauce right before using as it doesn’t keep well in the refrigerator. Sauce will turn brown with age.
Variation:
You can spice up the sauce by adding a little cayenne pepper or mild chili pepper to taste.
