Ingredients:
5-6 slices bacon, chopped
1 large onion, chopped
3-4 stalks celery, sliced into 1/2 inch slices
2 cups canned, minced clams
2 cups diced potatoes
4 cups half and half
3 Tbs. flour
2 Tbs. butter
Salt and pepper to taste
Preparation:
Sauté bacon until crisp. Remove bacon and add onions to bacon grease and sauté until tender. Drain clams reserving juice. Add clams, potatoes, clam juice, half and half, and simmer until potatoes are tender. Add bacon. Combine flour and butter then slowly stir into hot soup to thicken to the consistency desired. Adjust seasonings with salt and pepper.
