Cream of Broccoli and Mushroom Soup

Ingredients:
6 Tbs. butter (3/4 stick)
4 oz. mushrooms, sliced
4 cups steamed broccoli
2 onions, sliced
2 shallots, minced
4 cups canned chicken broth
3/4 cup heavy cream
Salt and pepper to taste

Preparation:
Melt 2 tablespoons butter in large skillet over medium-high heat. Add mushrooms and sauté until tender. Remove mushrooms from skillet with slotted spoon.

Melt remaining butter in same skillet and add onions and shallots. Sauté over medium-high heat until tender. Transfer onion mixture to large saucepan and add broccoli, and broth. Bring to a boil and cook until broccoli is just tender. Purée with stick blender until soup is smooth and blended. Add cream and salt and pepper. Just before serving add mushrooms.
