Ingredients:
5 potatoes, peeled and cut into 1/2 inch cubes
1 green bell pepper, seeded and cut into 1/2 inch dice
2 onions, peeled and chopped
1 1/2 tsp. salt
3 cups chicken broth
1/2 cup butter
2 Tbs. flour
1/4 tsp. ground pepper
3 cups half and half
3 Tbs. parsley, chopped
Chives, chopped
Sour Cream (optional)
Preparation:
Place potatoes, green pepper, onions, salt and broth in large pan. Bring to a boil and simmer until potatoes are tender (20 to 30 minutes). Purée potato mixture until smooth. Cream flour and butter together. Heat potato purée to a boil then slowly add flour mixture whisking constantly. Whisk in half and half and pepper.
Serving Suggestion:
Ladle soup into bowls and top with parsley, chives and sour cream.
