3 medium cucumbers
1/4 tsp. salt

Roasted sesame seeds
Dressing
2/3 cup rice vinegar
1/2 cup sugar
1/2 tsp. salt
Preparation:
Peel cucumbers, leaving some green for color. Cut in half lengthwise; remove seeds and thinly slice. Add salt and let stand 15-20 minutes. Meanwhile, combine dressing ingredients, bring to a boil then cool. Squeeze liquid from cucumbers (discard liquid). Combine cucumbers and dressing, mixing well. Chill until ready to serve. Just before serving, garnish with sesame seeds.
Variation:
Add some shredded crab meat or sliced octopus to cucumbers.
