French Vinaigrette

Ingredients:
1/3 cup red wine vinegar (homemade*)
1 Tbs. Dijon Mustard
1 tsp. salt
1/2 tsp. pepper
2/3 cup olive oil

Preparation:
Combine all ingredients in a salad dressing jar with a tight fitting lid. Put lid on jar and shake until well blended.

History:
Odile taught me that “French Dressing” is merely an oil and vinegar combination. The key though is to make your own vinegar.

*Place a bottle of red wine in an earthenware vessel. Use a French or Spanish red wine as the California wines do not work well. Add some mold from active vinegar and place lid on vessel. Lid should fit loosely as air is necessary for the mold to grow. Allow the wine to set at room temperature for 4 to 6 weeks until the mold has turned the wine to vinegar.

If you don’t have the mold starter, it will take several more weeks to create the vinegar.
