Fried Egg Sandwich

Ingredients:
8 slices whole wheat bread
4 Tbs. Best Foods mayonnaise
2 medium tomatoes, sliced
8 eggs
2 Tbs. butter
Salt and pepper

Preparation:
Spread mayonnaise on each slice of bread. Place sliced tomatoes on 4 slices. In a non-stick skillet, melt butter and add eggs. Season eggs with salt and pepper. Fry eggs for about 1 minute, breaking yolks with a fork and stirring slightly. Flip eggs and cook another minute.

Place two eggs on each sandwich on top of tomatoes. Top with other slice of bread and slice sandwiches diagonally. Sandwiches may be served open-faced as well.  Serve immediately.
