Fried Rice

Ingredients:
1/2 lb. bacon or sausage
3/4 lb. shrimp, peeled and quartered
8 – 12 oz. cooked diced salmon
2 zucchini, green part only, diced
1 small white onion, chopped
2 eggs, scrambled
6 green onions, chopped
2 clovse garlic, minced
4 cups cooked white rice
8 tablespoons butter
1/8 to 1/4 cup soy sauce

Preparation:
In a wok over medium heat, sauté shrimp and garlic in 4 tablespoons butter with minced garlic until pink. Remove shrimp. Add zucchini to wok and sauté until soft. Remove zucchini and set aside. Add remaining butter to pan and sauté white onion until it is soft. Cook bacon (or ground sausage) first in a separate pan. Add bacon (or sausage), eggs, zucchini, shrimp and rice to wok. Stir until all ingredients are well incorporated. Stir in soy sauce and green onions. Serve as a main course or as a side dish.

Variation:
Eliminate salmon and use other meats or vegetables as desired.
