Green Salad with Goat Cheese

Ingredients:
Fresh salad greens like spring lettuces
1 jar herb marinated goat cheese
4 Tbs. pine nuts
French vinaigrette
Salt and pepper to taste

Preparation:
Place greens in salad bowl and add vinaigrette. Toss well and taste. Greens should be well coated but not have a heavy taste. Put greens in salad bowls, season with salt and pepper and set aside.

Drain goat cheese rounds and place on ovenproof plate. Put cheese under broiler until cheese begins to bubble (about 1-2 minutes.) Place one 1 1/2 inch round of goat cheese in the center of each salad. Sprinkle a few pine nuts on each salad. Serve immediately.
