Madeira and Mushroom Wine Sauce

Ingredients:
2 cups Madeira wine
2 cups heavy cream
1 cup sliced mushrooms
4 Tbs. butter

Preparation:
In a small pot, reduce wine by half using high temperature. Add cream and bring to a rolling boil using medium temperature. Reduce liquid mixture until half remains.

While sauce is reducing, sauté mushrooms in butter. When soft, drain well and add mushrooms to wine mixture and add salt to taste.

Serving Suggestion:
Madeira sauce is great on sautéed veal scallops or chicken breasts.
