Ingredients:
4 – 8 potatoes
2 eggs, hard-boiled and chopped
1/2 medium onion, chopped
10-12 sweet pickles, chopped
1/2 to 3/4 cup mayonnaise
1/4 cup vinegar
Salt & Pepper
Preparation:
Boil potatoes until tender. Peel and cut into 1/2 inch cubes. Add onion, pickles, vinegar, eggs and mayonnaise. Mix well and adjust seasonings with salt, pepper and mayonnaise if necessary.
Chill well.
Serving Suggestion:
Potato salad is great with fried chicken, ham or just alone.
