Quick Black Bean Soup

Ingredients:
1 Tbs. vegetable oil
1 large onion, chopped
3 cloves garlic, minced
1 1/2 tsp. dried thyme
3-15 oz. cans black beans
1-28 oz. can diced tomatoes with juice
1-14 1/2 oz. can chicken broth
1 1/2 tsp. ground cumin
Salt and pepper
Sour Cream for garnish

Preparation:
Sauté onion, garlic and thyme in oil for 3-4 minutes. Add beans, tomatoes, broth and cumin. Bring to a boil on high heat; reduce heat and simmer for 1 minutes. Purée in batches in food processor fitted with metal blade. Season with salt and pepper.

Serving Suggestion:
Ladle into bowls and garnish with sour cream.

Variation:
Add chopped cilantro and/or salsa for more flavor.
