Ingredients:
1 large red bell pepper, peeled, seeded, chopped
3 cloves garlic, minced
1/4 tsp. hot pepper flakes or a few drops Vietnamese hot sauce
1/2 to 3/4 cup olive oil
1 Tbs. fresh herbs, chopped (basil, oregano, thyme)
Salt and pepper
Preparation:
Place chopped red bell pepper in bowl and cover with plastic wrap. Microwave red pepper for 2 to 3 minutes until soft. Drain.
Place minced garlic, herbs, red pepper flakes and red bell pepper in small food processor. Process mixture until smooth (2 to 3 minutes). Slowly add olive oil until incorporated. Adjust seasonings with salt, pepper and Vietnamese hot sauce.
Serving Suggestion:
Rouille is a very spicy sauce that is a must for bouillabaisse. It also goes great with broiled fish fillets such as yellowtail, halibut, wahoo, etc.
