1/2 cup olive oil
1/2 cup minced garlic cloves
1/4 cup green onions, chopped
1/2 cup parsley, chopped
1/2 cup fresh basil, chopped
1 lb. fresh mushrooms, sliced
1 2-lb. can of tomatoes, chopped
1/2 cup dry, white wine
Clams (2 per person)
10 squid, cleaned and sliced into rings
1 cup bay scallops
1 cup shrimp, peeled
1 cup cooked crab, chopped
1 cup white fish (rock cod)
Red pepper flakes to taste (1/2 to 1 teaspoon)
Preparation:
In a large skillet, place olive oil and sauté garlic, green onions, parsley and basil. Do not brown garlic. Add mushrooms and cook until soft. Add wine, pepper flakes and tomatoes. Bring to boil, add clams, scallops, shrimp and squid. Lower heat to simmer and add crab and fish.
While sauce is cooking, cook noodles al dente and drain. Toss noodles with sauce and serve in bowls.
NOTE: You can substitute your favorite seafoods as long as the total quantities remain the same.
