Ingredients:
1 lb. medium shrimp, cooked and chilled
3 Hass avocados, peeled and chopped or sliced
1 bunch fresh basil or dill, chopped
Balsamic vinegar
Olive oil
Salt and pepper
Preparation:
Arrange shrimp on plates alternating with slices of avocado. Top with chopped basil and drizzle with balsamic vinegar and olive oil. Sprinkle lightly with salt and pepper.
Variation:
Tomatoes may be substituted for either the shrimp or avocado – or just add sliced tomatoes to the shrimp and avocado.
