Smoked Salmon Pasta

Ingredients:
1 lb. spaghetti, cooked
8-12 oz. smoked salmon, diced
1/2 cup cream
1/2 cup grated fresh parmesan cheese
1 cup cooked spinach, warmed
1 small clove garlic, minced
2 Tbs. butter

Preparation:
Melt butter in skillet. Add garlic and diced salmon. Sauté salmon until it turns opaque. In a separate pan, heat cream. When cream is hot, add cheese and stir until melted. Remove from heat. Place hot spaghetti in pasta bowl. Add salmon and cream to spaghetti and stir together. Put spinach on top.

Serving Suggestion:
Serve pasta hot with a crisp green salad.

Variation:
Add chopped sun dried tomatoes for a little more flavor. Try bow tie pasta or other shapes in place of the spaghetti.

History:
In the interest of cleaning out the refrigerator one night, I took all the leftovers out and mixed them together. I had a piece of sautéed salmon fillet, half a package of lox, a cup of leftover spinach and a serving bowl of leftover buttered pasta. Smoked salmon pasta was the result and when we finished dinner, Mike said it was a keeper and handed me a pen and paper.
