Sopa de Ajo

Ingredients:
20-30 garlic cloves
1/4 cup olive oil
1/4 tsp. red pepper flakes
1 Tbs. salt
1 tsp. thyme
2 cups water
1/4 cup duck stock
8-10 slices French bread
1 clove garlic, cut in half
3-4 Tbs. olive oil
Seasoned salt
Eggs (one for each bowl of soup)

Preparation:
Sauté 20 to 30 garlic cloves in olive oil until golden. Add red pepper flakes, salt, thyme, water and stock to pan. Simmer until liquid reduced by half (about 30 minutes).

Rub slices of bread with cut garlic clove then drizzle with olive oil and sprinkle with seasoned salt. Brown under broiler then place one slice in each soup bowl.

Drop egg in soup and cook to desired doneness. Place egg on slice of Bread then pour soup over bread and serve.

History:
Sopa de Ajo is a classic Spanish soup. This recipe comes from Rick Boufford of Black Sheep Bistro.
