Artichokes

Ingredients:
4 artichokes
Mayonnaise or melted butter
 
Preparation:
Cut off stems and trim leaves of artichokes. Place on rack inside pressure cooker with an inch of water in the bottom. Heat pressure cooker until steam begins to release and pressure cook for another 20 minutes.
Remove from heat and put pan under cold water faucet until pressure is released and pan can be safely opened.
 
Drain and remove artichokes from pan. Place on plate.
 
Serving Suggestion:
I like my artichoke leaves dipped in real mayonnaise (Best Foods) and Mike likes his dipped in melted butter. Either way, they are delicious.
 
Variation:
Try artichokes with fried rice for a unique meal.
