Banana Cream Pie

Ingredients:
1 cup sugar
2 cups milk or half in half
3 Tbs. corn starch
3 eggs
Pinch salt
1 Tbs. butter
1 Tbs. Vanilla
2 small bananas
1 cup heavy cream
2 Tbs. powdered sugar

Preparation:
Cook milk or half and half to scald (do not boil). Mix corn starch with sugar and salt. Gradually add sugar to scalded milk. Beat eggs and add to milk. Over medium-high heat, whisking constantly, let mixture thicken. Remove from fire and add butter and vanilla. Stir well and let cool.

Peel and slice bananas. Place banana slices in bottom of a baked pie shell. Top with cream filling. Whip heavy cream with powdered sugar until thick. Place on cream filling and secure to edges of crust. Chill.

Variation:
Meringue can be substituted for the whipped cream topping.
