Blackeyed Peas

Ingredients:
2 cups fresh blackeyed peas
3 15-oz. cans chicken broth
5 slices bacon, chopped
1 small onion, coarsely chopped
1 Tbs. salt
1/2 tsp. pepper
 
Preparation:
Combine all ingredients in a saucepan. Simmer for 6 hours. Add additional chicken broth if necessary.
 
Serving Suggestion:
Blackeyed peas are best accompanied by fried potatoes, cooked sausage and corn bread.
 
History:
Blackeyed peas, corn bread, sausage, fried potatoes, and raw onion were my Dad’s favorite meal. Mom always made this for New Year’s Day telling us that it was good luck to eat blackeyed peas on the first day of the year.
