Broccoli Timbales

Ingredients:
1 1/2 cups cooked, well-drained broccoli, chopped
1 1/2 cups warm cream
4 eggs
3/4 tsp. salt
1/2 tsp. paprika
1/8 tsp. grated nutmeg
A few drops lemon juice
Hollandaise Sauce
 
Preparation:
Butter individual or larger molds lightly. Preheat oven to 325˚.
Combine and beat with a wire whisk the cream, eggs, salt, paprika, nutmeg, and lemon juice. Fold in the broccoli. Pour into molds and place molds in a pan of hot water. Place pan in oven. Make sure water never boils. Bake the timbales for 20 to 50 minutes, depending on the size of the mold. They are done when a knife blade inserted in the center comes out uncoated. Invert onto a plate.
 

Serving Suggestion:
Serve hot with a spoonful of hollandaise sauce drizzled on top.
 
Variation:
Substitute cauliflower, spinach, asparagus, or mushrooms for broccoli.
