Chocolate Pie


Ingredients:
1 baked pie crust
1 cup sugar
2 cups milk or cream
3 Tbs. corn starch
3 eggs, well beaten
Dash salt
1/4 cup dark cocoa
1 tbs. butter
1 1/2 Tbs. vanilla

Preparation:
Cook milk to scald. Mix cornstarch, sugar, salt and cocoa. Add to milk. Beat eggs and add to milk. Stir continuously over medium-high heat until it thickens. Remove from heat and add butter and vanilla. Beat with mixer until smooth. Fill baked pastry shell and chill.

Serving Suggestion:
Top with whipped cream and enjoy.

Variation:
Pie may be topped with meringue instead of whipped cream.
