Corn Fritters

Ingredients:
2 eggs, lightly beaten
1/2 cup milk
1 tsp. baking powder
1 tsp. salt
1 cup flour
1 cup corn kernals (fresh or canned)

Preparation:
Combine flour, baking powder and salt. Place eggs, and milk in a bowl. Beat in the flour mixture to make a batter. Add corn and mix well.

Heat oil to 375˚ and drop corn batter by spoonfuls into hot oil. Brown on both sides, drain and remove.

Serving Suggestion:
Serve hot as is or, if desired, maple syrup can be spooned over fritters.
