Cream Pie


Ingredients:
1 cup sugar
2 cups milk or half in half
3 Tbs. corn starch
3 eggs
Pinch salt
1 Tbs. butter
1 Tbs. Vanilla
1 cup heavy cream
2 Tbs. powdered sugar

Preparation:
Cook milk or half and half to scald (do not boil). Mix corn starch with sugar and salt. Gradually add sugar to scalded milk. Beat eggs and add to milk. Over medium-high heat, whisking constantly, let mixture thicken. Remove from fire and add butter and vanilla. Stir well and let cool.

Fill a baked pie shell with cream filling. Whip heavy cream with powdered sugar until thick. Place on cream filling and secure to edges of crust. Chill.

Variation:
Meringue can be substituted for the whipped cream topping. Add grated cocoanut to filling and sprinkle toasted cocoanut on top of whipped cream for a cocoanut cream pie.
