Crêpes

Ingredients:
1/2 cup flour
2 eggs
1/2 cup milk
1/2 cup water
2 Tbs. oil
1 tsp. salt
1 tsp. vanilla
1 Tbs. Cognac
1/2 tsp. dry yeast

Preparation:
Mix flour, salt, sugar and oil together. Add vanilla, yeast, eggs and mix well. Then add milk and water. Beat well with mixer. Pour batter on hot crepe pan. Cook until brown and peel off pan into plate. Continue until all the batter is gone.

Serving Suggestion:
Crêpes can be filled with jams or fruits or, as in France, with eggs, bacon or other breakfast foods. They are great used in a crepe suzette (flamed sugar and orange liqueur) or filled with ice cream.
