Diced Sautéed Potatoes

Ingredients:
6 to 8 Yukon Gold or other baking potatoes
1/2 cup clarified butter
Salt

Preparation:
Wash and bake potatoes for 45 minutes at 350˚ or until close to being soft. Cool. Peel potatoes and cut into 1/2 inch dice. Place a skillet, large enough to cook potatoes in a single layer, on high heat. When hot, add clarified butter and potatoes. Cook on high stirring occasionally until potatoes are golden brown. Drain potatoes, salt and serve.
